For the Sauce
  • 2 tablespoons Sesame Oil or substitute with another cooking oil
  • 1/4 cup Peanut Butter or almond/sunflower butter
  • 1 tablespoon Soy Sauce or tamari for gluten-free
  • 1 tablespoon Tomato Paste or use fresh tomatoes for a lighter flavor
  • 1 tablespoon Rice Vinegar or substitute with apple cider vinegar
For the Vegetables
  • 1 cup Carrot chopped
  • 2 cloves Garlic minced
  • 1/2 medium Red Onion diced
  • 1/2 cup Green Peas frozen

Method
 

Step-by-Step Instructions
  1. Boil water in a large pot over high heat. Add rice noodles and cook according to package instructions, about 6-8 minutes. Drain and rinse under cold water.
  2. In a large skillet, heat sesame oil over medium-high heat. Add carrots, garlic, and red onion. Cook for about 5 minutes until softened.
  3. Reduce heat and add peanut butter, tomato paste, soy sauce, and rice vinegar to the skillet. Stir for 2-3 minutes until creamy.
  4. Add drained noodles to the pan along with green peas. Fold gently until coated and heated through, about 2 minutes.
  5. Serve immediately and garnish with crushed peanuts or fresh herbs if desired.
