  4. In a bowl, mix the scooped eggplant flesh, minced garlic, and feta cheese.
  5. Fill the eggplant halves with the mixture, packing tightly.
  6. Place the filled eggplant on a baking sheet and bake for 25-30 minutes.
  7. Once done, allow to cool slightly and garnish with fresh parsley before serving.
