Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs and melted butter until the mixture resembles wet sand. Press this mixture into the prepared pan to form a crust.
  3. Peel and mash the ripe kiwis in a separate bowl until smooth. Stir in sugar, lemon juice, cornstarch, and eggs until well blended.
  4. Pour the kiwi mixture over the pre-baked crust, spreading it evenly. Bake for 25-30 minutes or until set.
  5. Allow the pan to cool completely at room temperature, then refrigerate for an hour before slicing.
  6. Cut into squares and serve with optional toppings.
