Ingredients
  

For the Chicken Skewers
  • 1.5 pounds boneless, skinless chicken breast
  • ¼ cup olive oil or avocado oil
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 2 tablespoons Mexican chili powder or paprika and cumin
  • 1 teaspoon ground cumin or coriander
  • 1 teaspoon smoked paprika or regular paprika
  • 1 teaspoon garlic powder or fresh garlic
  • 1 teaspoon onion powder or finely chopped fresh onion
  • ½ teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground is best
  • 1 tablespoon honey or agave syrup
  • 6-8 wooden skewers soaked in water
For Garnish and Serving
  • 1 cup cilantro chopped, optional
  • 2 pieces lime wedges for serving

Method
 

Marinating and Grilling
  1. In a medium bowl, whisk together olive oil, lime juice, soy sauce, Mexican chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and honey to create the marinade.
  2. Cut the chicken breast into 1-inch cubes and add to the marinade, tossing to coat well. Cover and refrigerate for at least 1 hour.
  3. Preheat your grill to medium-high heat (375°F to 400°F) and oil the grates to prevent sticking.
  4. Soak the wooden skewers in water for about 30 minutes, then thread the marinated chicken cubes onto the skewers, alternating with vegetables if desired.
  5. Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is charred and cooked to an internal temperature of 165°F.
  6. Let the skewers rest for a few minutes before garnishing with cilantro.
  7. Serve with lime wedges for an extra zesty kick.
