Marinating and Grilling
- In a medium bowl, whisk together olive oil, lime juice, soy sauce, Mexican chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and honey to create the marinade.
- Cut the chicken breast into 1-inch cubes and add to the marinade, tossing to coat well. Cover and refrigerate for at least 1 hour.
- Preheat your grill to medium-high heat (375°F to 400°F) and oil the grates to prevent sticking.
- Soak the wooden skewers in water for about 30 minutes, then thread the marinated chicken cubes onto the skewers, alternating with vegetables if desired.
- Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is charred and cooked to an internal temperature of 165°F.
- Let the skewers rest for a few minutes before garnishing with cilantro.
- Serve with lime wedges for an extra zesty kick.
