Step-by-Step Instructions for Pizza Eggs
- In a non-stick frying pan over medium heat, sprinkle half of the grated reduced-fat cheese evenly across the bottom. Allow it to melt and become slightly golden, which should take about 2-3 minutes.
- While the cheese is melting, crack the large eggs into a bowl and whisk them vigorously until smooth and blended, about 1-2 minutes.
- Once the cheese is melted, pour the whisked eggs evenly over the cheese. Cover the pan with a lid and allow it to cook for about 4-5 minutes.
- After 4-5 minutes, carefully slide a spatula under one edge and gently lift it to flip the entire egg-cheese mixture.
- Spread 1 tablespoon of passata evenly on the cooked side, layer the salami slices on top, followed by the remaining grated cheese. Cover again and cook for another 2-3 minutes.
- Remove the Pizza Eggs from the pan, sprinkle with mixed herbs for added flavor, cut into wedges and serve immediately while warm.
