- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Unroll the thawed puff pastry and cut into star shapes 2–3 inches in size.
- In a bowl, combine cream cheese, goat cheese, herbs, and cooked sausage; mix until smooth.
- Place a spoonful of filling in the center of each pastry star and fold the points over to seal.
- Apply egg wash with a pastry brush and sprinkle sesame seeds on top if desired.
- Bake in the preheated oven for 15-20 minutes until puffed and golden brown.
