  • 1/4 teaspoon Salt
  • 2 cups Diced Rhubarb Fresh or thawed from frozen.
  • 1 teaspoon Ground Cinnamon Optional for extra flavor.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, combine all-purpose flour and powdered sugar. Cut in cold, cubed butter until the mixture resembles coarse crumbs.
  3. Press the crust mixture into the bottom of your greased pan and bake for 15 minutes until lightly golden.
  4. In the same bowl, lightly beat the room temperature eggs. Stir in granulated sugar, a little flour, salt, and optional cinnamon until well combined.
  5. Fold the diced rhubarb into the filling mixture and pour over the warm crust.
  6. Return the pan to the oven and bake for about 60 minutes until the filling is set and golden.
  7. Allow the Rhubarb Dream Bars to cool completely at room temperature before slicing.
