- Preheat your oven to 325°F (163°C) and grease a 9x13 inch baking pan.
- In a large mixing bowl, combine all-purpose flour and powdered sugar. Cut in cold, cubed butter until the mixture resembles coarse crumbs.
- Press the crust mixture into the bottom of your greased pan and bake for 15 minutes until lightly golden.
- In the same bowl, lightly beat the room temperature eggs. Stir in granulated sugar, a little flour, salt, and optional cinnamon until well combined.
- Fold the diced rhubarb into the filling mixture and pour over the warm crust.
- Return the pan to the oven and bake for about 60 minutes until the filling is set and golden.
- Allow the Rhubarb Dream Bars to cool completely at room temperature before slicing.
