- Crack 4 large eggs into a mixing bowl and add 2 tablespoons of milk, along with a pinch of salt and pepper. Whisk until smooth.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Allow it to melt before pouring in the egg mixture.
- Gently stir the eggs for about 2-3 minutes until softly set but still creamy. Remove from heat.
- Spread mayonnaise on one side of each of the 4 slices of bread.
- Place 2 slices of bread in the skillet, mayonnaise side down, and layer with 1 slice of cheese and the scrambled eggs. Top with another slice of cheese.
- Top with the remaining slices of bread, mayonnaise side up, and gently press down.
- Melt 1 tablespoon of butter in the skillet and grill the sandwiches for 3-4 minutes on each side, until golden brown.
