  • 1 teaspoon salt Essential for flavor

For the Pesto
  • 1/2 cup homemade spinach-basil pesto Store-bought can be used
  • Parmesan cheese Optional for richness, skip for vegan

Equipment

  • Mixing bowl
  • Wooden spoon
  • baking sheet
  • parchment paper
  • wire rack

Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine 4 cups of all-purpose flour, 2 tablespoons of sugar, and 1 packet of active dry yeast. Gently warm 1 cup of milk and 1/4 cup of melted butter, then pour into the flour mixture along with 1 teaspoon of salt. Use a wooden spoon to combine until a rough dough forms, then turn it out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  2. Once the dough is smooth, create a well in the center and incorporate 1/2 cup of homemade spinach-basil pesto. Gently fold the pesto into the dough, ensuring even distribution. Knead for an additional 2-3 minutes until the pesto has blended fully and the dough exhibits a lovely green hue throughout.
  3. Place the dough into a greased bowl, turning it to coat the surface lightly in oil to prevent sticking. Cover the bowl with a clean kitchen towel and set it in a warm, draft-free area. Allow the dough to rise for about 1 hour, or until it has doubled in size.
  4. After the dough has risen, punch it down gently to release the air. Transfer it to a floured surface and roll it out into a large rectangle, about 1/2 inch thick. Cut the dough into strips and form each strip into a shamrock shape.
  5. Arrange the shaped shamrocks on a parchment-lined baking sheet and cover them with a towel. Let them rise for an additional 30 minutes, or until they appear puffy.
  6. Preheat your oven to 375°F (190°C). Once heated, place the baking sheet in the oven and bake the rolls for about 24 minutes.
  7. Once baked, remove the rolls from the oven and allow them to cool on a wire rack for about 5 minutes. Brush the tops with melted butter before serving.
