Step-by-Step Instructions for Sweet Potato Bites
  1. Preheat your oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into evenly-sized 1-inch cubes. Toss the cubes with olive oil and salt, then spread them on a baking sheet.
  2. Roast the sweet potato cubes in the oven for 25–30 minutes, stirring halfway through. They're ready when golden and slightly crispy.
  3. While the sweet potatoes cool, mix cream cheese and chives in a bowl until smooth.
  4. After cooling for about 5 minutes, add a dollop of the cream cheese mixture onto each sweet potato cube.
