  • 1 bunch Broccoli Fresh or frozen
For the Sauce
  • 2 tbsp Olive Oil Can substitute with avocado oil
  • 3 cloves Garlic Minced
  • 1 pinch Red Pepper Flakes Adjust according to taste

For Garnish
  • ¼ cup Parmesan Cheese Can substitute with nutritional yeast for vegan option

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add broccoli and cook for 2-3 minutes until bright green.
  2. Carefully reserve ½ cup of the cooking water before draining the broccoli. Set aside both.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, cooking for 1-2 minutes.
  4. Add the broccoli and reserved pasta water to the skillet. Season with salt and pepper. Simmer for about 10 minutes.
  5. In the same pot, bring the reserved water back to a boil and cook the pasta according to package instructions.
  6. Drain the pasta without rinsing. Combine it with the broccoli mixture, tossing gently to mix.
  7. Add Parmesan cheese and adjust sauce consistency with reserved water if needed. Toss until evenly coated.
  8. Serve immediately, garnished with extra Parmesan or red pepper flakes if desired.
