Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and grease the 8x8 baking pan with coconut oil, lining the bottom with parchment paper.
  2. Grate fresh carrots until you have about two cups and transfer them to a large mixing bowl.
  3. Mix in eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla extract thoroughly using a handheld mixer.
  4. In a separate bowl, whisk together oat flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and sea salt.
  5. Pour dry ingredients into the wet mixture and fold together gently until just combined.
  6. Pour the batter into the prepared baking pan and bake for 20-25 minutes.
  7. Remove from the oven and cool in the pan for about 30 minutes.
  8. Prepare the frosting by blending Neufchatel cheese, Greek yogurt, maple syrup, and a pinch of salt until smooth.
