  • 1 tbsp Key Lime Zest Use lemon zest if key limes are out of season.
  • 2 tbsp Key Lime Juice

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare two small loaf pans by spraying them with non-stick baking spray.
  2. In a large mixing bowl, combine the box vanilla pound cake mix, cold water, melted unsalted butter, large egg, fresh key lime juice, and key lime zest until smooth.
  3. Evenly divide the batter between the prepared loaf pans and gently tap each pan on the countertop to release air bubbles.
  4. Place both loaf pans in the oven and bake for 30–35 minutes, checking doneness with a toothpick.
  5. Once baked, cool the cakes in the loaf pans for about 10 minutes before transferring them to a wire rack to cool completely.
  6. Prepare the glaze by whisking together powdered sugar, key lime juice, and additional key lime zest until smooth.
  7. Pour the glaze generously over the cooled Key Lime Pound Cakes and let it set for at least 15 minutes before slicing.
