Step-by-Step Instructions for Egg Fried Rice
  1. Begin by breaking apart the day-old white rice and set it aside while you prepare the other ingredients.
  2. Heat a tablespoon of oil in a large wok or skillet. Add the beaten eggs and cook quickly until just set.
  3. In the same wok, add another tablespoon of oil if needed and sauté the diced yellow onion until translucent.
  4. Add the frozen peas and carrots, and sauté until heated through.
  5. Add the prepared rice to the wok, stir well and stir-fry for about 2-3 minutes.
  6. Pour the Shaoxing rice wine around the edges of the wok, stir continuously for about 30 seconds.
  7. Add the light soy sauce and oyster sauce, and stir well for about 2 minutes.
  8. Drizzle toasted sesame oil over the egg fried rice, toss in green onions and mix everything together.
  9. Serve your homemade egg fried rice hot, garnished with additional green onions.
