Step-by-Step Instructions for Egg Fried Rice
- Begin by breaking apart the day-old white rice and set it aside while you prepare the other ingredients.
- Heat a tablespoon of oil in a large wok or skillet. Add the beaten eggs and cook quickly until just set.
- In the same wok, add another tablespoon of oil if needed and sauté the diced yellow onion until translucent.
- Add the frozen peas and carrots, and sauté until heated through.
- Add the prepared rice to the wok, stir well and stir-fry for about 2-3 minutes.
- Pour the Shaoxing rice wine around the edges of the wok, stir continuously for about 30 seconds.
- Add the light soy sauce and oyster sauce, and stir well for about 2 minutes.
- Drizzle toasted sesame oil over the egg fried rice, toss in green onions and mix everything together.
- Serve your homemade egg fried rice hot, garnished with additional green onions.
