For the Topping
  • 1 cup Mexican Cheese Blend dairy-free cheese for dairy-free version
  • to taste Fresh Cilantro for garnish

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and gather your ingredients.
  2. Slice the chicken breasts into cutlets and season with garlic powder, chili powder, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat, then sauté the seasoned chicken for 3-4 minutes on each side until golden brown.
  4. Sauté the chopped onion in the same skillet until translucent, about 5 minutes.
  5. Add the drained Ro-tel, black beans, corn, and smoked paprika to the skillet, cooking for 2-3 minutes.
  6. Return the chicken to the skillet, nestling it into the vegetable mixture, and sprinkle with cheese.
  7. Bake in the preheated oven for about 5-7 minutes until the chicken reaches 165°F (74°C) and the cheese is bubbly.
  8. Remove from the oven, garnish with cilantro, and serve.
