Step-by-Step Instructions for Egg and Cheese Toasts
  1. Preheat your oven to 400°F (or set your toaster oven to BAKE).
  2. Lay out your hearty sandwich bread on a baking sheet and lightly toast it under the broiler for about 1–2 minutes on each side.
  3. In a small bowl, crack an egg and beat it until smooth. Stir in your choice of grated cheese, fresh herbs, salt, and black pepper. Optionally, add cayenne for heat.
  4. Spread the egg and cheese mixture evenly on the toasted bread. If using, spread a thin layer of Dijon mustard on the bread before adding the egg mixture.
