  • 1 pound chicken breasts or thighs Cut into cubes
  • 2 cups zucchini Medium-sized, sliced
  • 1 cup bell peppers Chopped, assorted colors

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice Freshly squeezed

  • 1 tablespoon Dijon mustard
For Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste pepper
  • 1/2 teaspoon red pepper flakes Adjust for spice preference

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together olive oil, soy sauce, balsamic vinegar, lemon juice, brown sugar, Dijon mustard, and seasonings. Set aside.
  2. Combine chopped zucchini, bell peppers, and red onion with 3 tablespoons of the marinade in a resealable bag or bowl. Refrigerate for at least 30 minutes.
  3. In a separate bowl, mix marinated vegetables with diced chicken and the remaining marinade. Refrigerate for at least 4 hours.
  4. Soak wooden skewers in water for at least 30 minutes to prevent burning. Preheat grill or oven.
  5. Thread chicken and vegetables onto skewers, alternating, leaving space between each piece.
  6. Cook on a preheated grill for 8-12 minutes or bake at 400°F for 16-22 minutes until chicken reaches 160°F.
  7. Let kebabs rest for 5 minutes before serving.
