- In a medium bowl, whisk together olive oil, soy sauce, balsamic vinegar, lemon juice, brown sugar, Dijon mustard, and seasonings. Set aside.
- Combine chopped zucchini, bell peppers, and red onion with 3 tablespoons of the marinade in a resealable bag or bowl. Refrigerate for at least 30 minutes.
- In a separate bowl, mix marinated vegetables with diced chicken and the remaining marinade. Refrigerate for at least 4 hours.
