  • 1 cup Fresh Herbs, chopped Use parsley, mint, or coriander based on availability.
  • 1 tbsp Olive Oil Can substitute with avocado oil.
  • 0.5 tsp Salt Adjust to taste.
  • Black Pepper Adjust to personal preference.
For the Roasted Potatoes
  • 6 medium Potatoes, cut into wedges Substitute with sweet potatoes if desired.
  • 2 tbsp Olive Oil Alternative oils include canola or vegetable oil.
  • 0.5 tsp Salt
  • 0.5 tsp Cumin
  • 0.5 tsp Paprika
  • 0.5 tsp Dried Oregano
For the Tzatziki Sauce
  • 1 cup Thick Greek Yogurt Non-dairy yogurt can be an alternative.
  • 0.5 Cucumber, grated Squeeze to remove excess water.
  • 1 clove Garlic, minced Fresh garlic is recommended.
  • 1 tbsp Lemon Juice Lime juice can substitute if needed.
  • 0.3 cup Fresh Dill or Mint, chopped Use any preferred herb.
  • 1 tbsp Olive Oil Any light oil can be used.
For the Bowl Assembly
  • 2 cups Crisp Lettuce Leaves, roughly chopped
  • 2 medium Tomatoes, chopped
  • 2 Cucumbers, chopped
  • 0.5 Red Onion, chopped
  • 0.5 cup Kalamata Olives, pitted and halved
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • Salt and Pepper Adjust to taste.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, fresh herbs, olive oil, salt, and pepper. Mix thoroughly and refrigerate for about 2 hours.
  2. Preheat your oven to 425°F (220°C). Place meatballs on a greased baking sheet and bake for 30–40 minutes, turning halfway through.
  3. Toss potato wedges with olive oil, salt, cumin, paprika, and oregano. Spread on a baking sheet and roast for 40–60 minutes at 425°F (220°C).
  4. Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill or mint, olive oil, and a pinch of salt in a medium bowl to make tzatziki.
  5. Assemble the bowls with chopped lettuce, diced tomatoes, cucumbers, sliced red onion, halved olives, roasted potatoes, and meatballs. Drizzle with tzatziki sauce.
