- In a large mixing bowl, combine the ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, fresh herbs, olive oil, salt, and pepper. Mix thoroughly and refrigerate for about 2 hours.
- Preheat your oven to 425°F (220°C). Place meatballs on a greased baking sheet and bake for 30–40 minutes, turning halfway through.
- Toss potato wedges with olive oil, salt, cumin, paprika, and oregano. Spread on a baking sheet and roast for 40–60 minutes at 425°F (220°C).
- Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill or mint, olive oil, and a pinch of salt in a medium bowl to make tzatziki.
- Assemble the bowls with chopped lettuce, diced tomatoes, cucumbers, sliced red onion, halved olives, roasted potatoes, and meatballs. Drizzle with tzatziki sauce.
