Preparation Steps
- In a large pot, heat a tablespoon of olive oil over medium heat. Add sliced smoked sausage and sauté for about 5–7 minutes, stirring occasionally, until the sausage is golden brown and fragrant.
- Toss in the chopped onion and diced green and red bell peppers. Sauté these colorful vegetables for another 5–7 minutes, or until they soften and begin to caramelize slightly.
- Stir in the minced garlic and sauté for about 30 seconds, being careful not to burn the garlic.
- Pour in the diced tomatoes and tomato sauce, stirring to combine. Allow this mixture to cook for 2–3 minutes.
- Gently fold in the rinsed kidney and pinto beans, stirring to evenly distribute them throughout the sauce.
- Add in the long-grain white rice, stirring it into the mixture to toast slightly for about 1–2 minutes.
- Pour in the chicken broth and increase the heat to bring everything to a vigorous boil.
- Season the bubbling pot with chili powder, smoked paprika, cayenne pepper, oregano, salt, and black pepper. Stir well to combine.
- Return the sautéed sausage to the pot, cover it, and reduce the heat to low. Let it simmer for 20–25 minutes.
- After simmering, remove the pot from heat and fluff the rice gently with a fork. Garnish with chopped green onions if desired.
