Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C). Gather all your ingredients.
  2. Line a large casserole dish with aluminum foil for easy cleanup.
  3. Spread the sliced shallots and half of the garlic cloves evenly across the bottom of the dish.
  4. Place the chicken on top, drizzle with oil, and season generously with salt and pepper.
  5. Sprinkle thyme and rosemary over the chicken and add the remaining garlic cloves around.
  6. Pour the chicken broth and white wine along the edges of the dish.
  7. Roast in the oven for about 1 hour, until the skin is golden brown and the internal temperature is 165°F (74°C).
  8. Broil the chicken for an additional 5 to 7 minutes to enhance crispiness.
  9. Serve with pan sauce and your favorite sides like roasted potatoes or pasta.
