Step-by-Step Instructions
  1. Begin by heating 2 tablespoons of olive oil in a large pot over medium heat. Once the oil shimmers, add 1 large diced onion and cook for 3-4 minutes, stirring occasionally, until softened and translucent.
  2. Stir in 3 minced garlic cloves and sauté for an additional 30 seconds until fragrant. Then, incorporate 1 diced green bell pepper and 1 diced red bell pepper into the pot. Sauté the mixture for about 4-5 minutes, seasoning with salt and pepper.
  3. Add 1 pound of ground turkey to the pot, using a wooden spoon to break it apart as it cooks. Continue stirring and cooking for 5-6 minutes until the turkey is browned.
  4. Sprinkle in 2 tablespoons of chili powder, 1 teaspoon of smoked paprika, 1 teaspoon of ground cumin, 1 teaspoon of dried oregano, and ½ teaspoon of cayenne pepper. Toast the spices for 1 minute, stirring constantly.
  5. Pour in 2 cans of diced tomatoes, 1 can of tomato sauce, 2 cans of kidney beans, and 1 can of black beans, rinsed and drained. Add 1 cup of chicken or turkey broth, stirring well to combine.
  6. Reduce heat to low, cover the pot, and let the chili simmer for 30-40 minutes, stirring occasionally.
