- Bring a large pot of salted water to a boil. Add the lobsters and cook for 8-10 minutes until bright red. Remove and cool, then extract lobster meat.
- In a skillet, melt 3 tablespoons of butter over medium heat. Add shallots and sauté for 2 minutes until translucent.
- Add sliced mushrooms and cook for an additional 4-5 minutes until tender and fragrant.
- Deglaze with white wine, let simmer for 3-4 minutes. Stir in heavy cream and thicken for another 3 minutes.
- Fold in lobster meat, add paprika, and half the Parmesan. Season with salt and pepper.
- Spoon the mixture into lobster shells, top with remaining Parmesan, and broil for 3-5 minutes until golden.
