Method
 

Preparation Steps

  3. Chop the Vegetables: Slice cucumber, shred cabbage, julienne carrot, and slice bell pepper.
  4. Combine the Ingredients: Add vegetables to the bowl with noodles, and toss gently.
  5. Add the Herbs and Peanuts: Stir in cilantro, mint, and optional chopped peanuts.
  6. Dress the Salad: Drizzle dressing over the mixture, tossing to coat thoroughly.
  7. Serve or Chill: Serve immediately or refrigerate for 15-30 minutes to meld flavors.
