  1. Preheat your oven to 160°C (320°F, fan) or 170°C (338°F, conventional) and line a baking tray with parchment paper.
  2. Melt chopped dark chocolate and butter in a heatproof bowl over simmering water for about 5-7 minutes. Stir in vanilla extract and let cool slightly.
  3. In a separate bowl, beat together the caster sugar, demerara sugar, and eggs until thick and fluffy, about 5 minutes.
  4. Sift together the flour, cocoa powder, baking powder, and salt in another bowl. Mix in the chocolate chips.
  5. Fold the cooled chocolate mixture into the whipped eggs, then fold in the dry ingredients until just combined.
  6. Drop spoonfuls of dough onto the prepared baking tray, spacing them 2 inches apart, and bake for 12-14 minutes.
