- In a medium-sized mixing bowl, combine 1 cup of old-fashioned oats and a pinch of salt.
- Add 1/2 cup of nut butter and 1/4 cup of maple syrup to the dry mixture and stir for about 2 minutes.
- Gently fold in 1/4 cup of rainbow sprinkles using a spatula and stir for about a minute.
- Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes.
- Scoop out about 1 tablespoon of the mixture and roll into a ball. Repeat until you've shaped approximately 12 balls.
- Arrange the rolled Funfetti Energy Balls on a parchment-lined baking sheet and chill for another 30 minutes.
