Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the sweet potatoes into uniform 1-inch cubes.
  3. Melt unsalted butter in a small saucepan over low heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Combine the sweet potatoes with olive oil, salt, black pepper, and smoked paprika. Pour the melted garlic butter over and toss well.
  5. Line a baking sheet with parchment paper or grease it. Spread the sweet potato mixture in a single layer.
  6. Roast for 25-30 minutes, tossing halfway to promote even browning.
  7. Check for doneness by piercing with a fork. If needed, roast for an additional 5-10 minutes.
  8. Remove from the oven and sprinkle fresh rosemary over the hot sweet potatoes.
  9. Transfer to a serving dish and garnish with freshly chopped parsley.
