Step-by-Step Instructions
  1. Lightly grease the Crockpot with 1 tablespoon of olive oil.
  2. Layer the halved baby potatoes on the bottom, then place the chicken breasts on top.
  3. In a bowl, mix the remaining olive oil, Parmesan cheese, garlic, Italian seasoning, salt, and black pepper. Pour over the chicken and potatoes.
  4. Cover the Crockpot and cook on low for 4 hours.
  5. Check that the chicken reaches 165°F and potatoes are fork-tender. If needed, cook an additional 30 minutes.
  6. Garnish with chopped parsley before serving.
