Preparation
  1. Mince the garlic and chop the shallots. Cube the fresh mozzarella and season the chicken fillets with salt, pepper, garlic powder, and sweet paprika.
Cooking
  1. Heat olive oil and butter in a skillet over medium heat. Add seasoned chicken fillets and cook for approximately 5 minutes on each side until golden brown.
  2. Remove the chicken from the skillet and set aside.
Sauce Preparation
  1. In the same skillet, add shallots and garlic, sauté for 2 minutes. Pour in the white wine to deglaze the pan and let it simmer for 2-3 minutes.
  2. Stir in tomato paste, dried basil, salt, and pepper, then add chicken broth and cherry tomatoes. Bring to a gentle boil.
Final Steps
  1. Return the chicken to the skillet, add chopped fresh basil and mozzarella. Simmer for 3-5 minutes until the mozzarella melts.
  2. Alternatively, bake in a preheated oven at 400°F for about 10 minutes until bubbly.

  1. Serve immediately over pasta or ciabatta, garnishing with extra chopped basil.
