- Begin by rinsing 8–10 medium radishes thoroughly under cold water to remove any dirt. Slice the radishes into even rounds, about 1/8" thick, using a sharp knife or mandoline for consistency.
- In a large mixing bowl, combine the sliced radishes with the juice of half a lemon and a pinch of salt. Toss them gently, then massage the radish slices for 1-2 minutes to soften their peppery bite.
- Once the radishes are nicely massaged, add about 2 tablespoons of olive oil, ¼ cup of grated Parmesan cheese, and a handful of torn fresh dill leaves to the bowl. Gently toss the ingredients together.
