Preparation Steps
  1. Marinate the Chicken: Cut the chicken into 1-inch chunks, combine with salt, pepper, teriyaki sauce, and pineapple juice, marinate for 20 minutes to 2 hours.
  2. Prepare the Skewers: Soak wooden skewers in water for 20-30 minutes to prevent burning.
  3. Chop the Vegetables: Cut pineapple into 1-inch chunks, slice bell peppers and scallions.
  4. Assemble the Kabobs: Thread marinated chicken, pineapple, bell pepper, and scallion onto soaked skewers.
  5. Preheat the Grill: Heat grill to medium-high (about 400°F), clean grates for non-stick cooking.
  6. Grill the Kabobs: Grill for 12-15 minutes, turning every 3-4 minutes until chicken is golden and reaches 165°F.
  7. Glaze with Teriyaki Sauce: Brush with remaining teriyaki sauce in the last few minutes of grilling.
