Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together the freshly juiced lime juice, zested lime, and honey until smooth.
  2. Trim off both ends of the watermelon, cut into quarters, then slice each quarter into 1-inch wedges.
  3. Preheat the grill to high heat, about 450°F (232°C).
  4. Brush both sides of each watermelon wedge with the lime mixture and grill for 2-3 minutes per side.
  5. Remove from grill, drizzle remaining lime mixture, and sprinkle with cilantro before serving.
