Bake for about 6 minutes, until soft but not fully melted. Carefully press the mozzarella into the molds, then chill in the fridge for 10-15 minutes until firm.
  2. In a large mixing bowl, combine mixed salad greens. Drizzle with olive oil and, if desired, squeeze fresh lemon juice. Toss gently to coat the greens evenly.
