Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and salt. Stir until well mixed.
  3. In a small saucepan, melt the nut butter and honey (or maple syrup) over low heat. Stir until smooth, then mix in the vanilla extract.
  4. Pour the warm nut butter mixture over the dry ingredients and fold until everything is evenly coated.
  5. Drop spoonfuls of the mixture onto the baking sheet, gently press down each mound to flatten into round cookies.
  6. Bake for 12-15 minutes, until golden and firm. Avoid overbaking.
