Ingredients
  

For the Stew
  • 6 links traditional pork sausages chicken or beef can be used
  • 6 slices thick-cut bacon
  • 2 medium onions leeks can be used as a substitute
  • 4 medium Yukon Gold potatoes cubed
  • 2 medium carrots optional, parsnips can be used
For the Broth
  • 4-6 cups chicken or vegetable stock enough to cover ingredients
For Seasoning
  • 2 sprigs fresh thyme or dried herbs
  • 2 leaves bay leaves

Method
 

Step-by-Step Instructions
  1. Slice the sausages into bite-sized pieces, and chop the bacon into smaller chunks. Dice the onions and cube the potatoes. Prepare any additional vegetables.
  2. In a large pot, layer the sausage and bacon at the bottom followed by onions, then potatoes. Add any other vegetables on top.
  3. Pour in enough stock to cover the layered ingredients, ideally at room temperature or warmed.
  4. Season with thyme, bay leaves, salt, and pepper, and stir gently.
  5. Bring to a simmer over medium heat, then cover and reduce to low heat, allowing to cook for about 1 hour.
  6. Check the doneness of the sausages and potatoes after an hour.
  7. Serve hot, garnished with fresh herbs and alongside Irish soda bread.
