Step-by-Step Instructions for Easy Homemade Schnittkäse with Herbs and Garlic
  1. In a mixing bowl, whisk together the Sauerrahm and eggs until smooth (2-3 minutes).
  2. In a thick-bottomed pot, heat the milk with a pinch of salt until it simmers (5-7 minutes).
  3. Gradually stir in the Sauerrahm and egg mixture and continuously stir for about 2-3 minutes.
  4. Lower the heat and let the mixture simmer gently for about 5 minutes, stirring frequently.
  5. Remove pot from heat and let it rest for 5 minutes to meld flavors.
  6. Prepare a sieve lined with cheesecloth and pour the mixture into it to drain for 10-15 minutes.
  7. Fold in chopped dill, pressed garlic, and black pepper gently.
  8. Wrap the mixture tightly in cheesecloth and refrigerate for at least 8 hours or overnight.
  9. Unwrap and slice the cheese into desired thickness, serve and enjoy.
