  • 4-5 lbs Baby back ribs Tender and meaty
  • 2 tbsp Olive oil Can substitute with vegetable oil
  • 2 tbsp Kosher salt Sea salt can be used as an alternative

  • 1 tbsp Smoked paprika Regular paprika can be substituted
For the Seasoning Mix

For the Sweet & Spicy Glaze
  • 1/2 cup Honey Maple syrup is a good alternative
  • 2 medium Jalapeños Remove seeds for less heat
  • 1/4 cup Apple cider vinegar Can replace with white vinegar
  • 1/4 cup Soy sauce Use tamari for gluten-free
  • 1/4 cup Brown sugar Coconut sugar is an alternative
  • 1 tbsp Dijon mustard Yellow mustard can work
  • 1/2 tsp Crushed red pepper flakes Optional
  • 2 tbsp Unsalted butter For a glossy finish

Method
 

Step-by-Step Instructions for Honey Jalapeño Party Ribs
  1. Remove the membrane from the back of the ribs and pat them dry. Rub with olive oil and apply the dry seasoning mixture evenly.
  2. For oven, preheat to 300°F (150°C). Place ribs on a foil-lined sheet, cover with foil, and bake for 2.5 to 3 hours until tender. For smoker, set to 225°F (107°C) and smoke for 5-6 hours, misting with apple juice every hour.
  3. While ribs are cooking, make the glaze by simmering honey, chopped jalapeños, vinegar, soy sauce, brown sugar, mustard, and optional red pepper flakes in a saucepan for 10-15 minutes until thick.
  4. Once cooked, brush the ribs generously with the glaze. Broil or grill on medium heat for 3-5 minutes for caramelization.
  5. Let the ribs rest for 5 minutes after broiling. Slice for serving and drizzle with extra glaze.
