Ingredients
  

For the Salsa
  • 2 cups Tomatoes fresh or canned
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 to taste Jalapeños fresh or pickled
  • 1/4 cup Fresh Cilantro chopped
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 to taste Salt
  • 1 to taste Pepper
For the Beans
  • 1 can Canned Refried Beans black or pinto
  • 1 teaspoon Spices (Cumin and Chili Powder)
For the Eggs
  • 4 Eggs sunny-side-up
For the Tortillas
  • 4 Corn Tortillas high-quality
For the Toppings
  • 1 medium Avocado sliced or as guacamole
  • 1/2 cup Cotija Cheese crumbled
  • 1/2 cup Sour Cream optional
  • to taste Hot Sauce for serving

Method
 

Salsa Preparation
  1. Heat a nonstick skillet over medium heat and add diced tomatoes, chopped onion, and minced garlic. Simmer for about 10 minutes.
  2. Add jalapeños, salt, pepper, and lime juice. Stir and set aside.
Beans Cooking
  1. In the same skillet, stir in refried beans and reserved salsa. Cook over low to medium heat, smashing beans slightly.
Tortilla Frying
  1. Add oil to a cast iron skillet and warm over medium heat. Fry corn tortillas until golden and slightly crisp.
Eggs Cooking
  1. Lower heat and crack eggs into the skillet, frying sunny-side-up until whites are set.
Dish Assembly
  1. On each plate, place a tortilla, layer with refried beans, sunny-side-up eggs, and salsa. Add toppings and serve immediately.
