- In a small saucepan, combine 1 cup of fresh blueberries, 2 tablespoons of honey, and 1 cup of water. Heat over medium heat for about 5 minutes, stirring gently until the blueberries burst and release their juices. Strain the mixture through a fine mesh sieve into a bowl to extract the blueberry juice, setting it aside to cool.
- In a separate pot, bring 3 cups of water to a boil, then remove from heat. Place 2 green tea bags in the water and steep for 5 minutes. After steeping, carefully remove the tea bags and let the brewed tea cool slightly.
- In a large pitcher, pour in the cooled blueberry juice along with the brewed green tea. Add 1 tablespoon of freshly squeezed lemon juice. Stir well to combine all the flavors and adjust sweetness as desired.
- Transfer the pitcher to the refrigerator and let it chill for at least 1 hour.
- Fill glasses generously with ice cubes. Pour the chilled blueberry green tea over the ice and garnish with fresh mint leaves and blueberries if desired.
