- Warm the Biscoff cookie butter in the microwave for about 15-20 seconds. In a mixing bowl, mix the softened cream cheese with the cookie crumbs and warmed cookie butter until well combined.
- Roll portions of the dough into 1-inch balls and place them on a parchment-lined baking sheet. Refrigerate for at least 1 hour to firm up.
- Melt the white chocolate by heating it in a microwave-safe bowl in 20-second increments, stirring until smooth, about 1-2 minutes.
- Dip each truffle into the melted white chocolate, allowing excess to drip off before placing them back on parchment paper.
