Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and spray a baking sheet with nonstick cooking spray.

  3. In a large bowl, whisk melted butter and sugar until combined, then add egg, vanilla, and applesauce; mix until smooth.
  4. Gradually fold the dry mixture into the wet ingredients until just combined, then gently fold in diced apples.
  5. Drop tablespoon-sized portions of batter onto the prepared baking sheet, leaving space in between.
  6. Bake for about 10 minutes, until light golden and firm to touch.
  7. Switch to broil for an additional 2-4 minutes, watching closely for even caramelization.
  8. In a bowl, whisk powdered sugar with apple cider until pourable.
  9. Brush the glaze over warm fritter bites and let sit for 15 minutes to set.
