Preparation Steps

  2. Mash about 3–4 very ripe bananas in a large mixing bowl until smooth.
  3. Add melted butter, granulated sugar, brown sugar, eggs, and ground cinnamon to the mashed bananas. Stir until combined.
  4. Fold in flour, baking soda, and salt until just combined. Don't overmix.
  5. For the streusel topping, mix flour and sugar, then cut in cold butter until crumbly.
  6. Pour batter into the loaf pan and sprinkle the streusel topping over the batter.
  7. Bake for 60–70 minutes, checking for doneness with a toothpick.
  8. Let cool in the pan for about 10 minutes before transferring to a wire rack.
