Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or baking spray, then dust with flour.
  2. In a mixing bowl, combine 1 cup of softened butter, 1 cup of granulated sugar, and 1/2 cup of brown sugar. Beat on medium speed for 3-4 minutes until fluffy.
  3. Add 3 large eggs one at a time, mixing well after each. Pour in 2 teaspoons of vanilla extract and mix until fully combined.
  4. In another bowl, whisk together 2 cups of flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Gradually add to the wet mixture, mixing on low speed until combined.
  5. Gently fold in 1 cup of toasted pecans using a spatula.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick comes out clean and the edges are golden brown.
  8. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
