- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix chocolate cookie crumbs, melted butter, and granulated sugar. Press into a 9-inch springform pan. Bake for 10 minutes and let it cool.
- In a large bowl, beat cream cheese until smooth. Gradually add sugar, eggs, vanilla, sour cream, and melted chocolate. Mix until smooth.
- Blend fresh strawberries, a bit of sugar, and lemon juice until smooth for the strawberry swirl.
- Pour the chocolate cheesecake filling onto the cooled crust. Drop spoonfuls of strawberry puree and swirl gently with a knife.
- Bake for 50-60 minutes until the edges are set and the center jiggles slightly. Turn off the oven and cool inside for 1 hour.
- After cooling, refrigerate for at least 4 hours or overnight before serving.
- Remove from pan, slice with a sharp knife, and optionally garnish with whipped cream or chocolate shavings.
