- In a large bowl, lightly break up the ground beef, then add minced garlic, grated ginger, sesame oil, soy sauce, and black pepper. Gently mix until just combined.
- Divide the mixture into four portions, shaping each into a 6-ounce patty. Chill in the refrigerator for at least 1 hour.
- Preheat the cast-iron skillet or grill over medium-high heat for about 5 minutes.
- Place the chilled patties on the hot skillet or grill. Cook for 3-4 minutes on one side until browned, then flip and cook for another 3-4 minutes.
- Once cooked, remove the patties and coat each with Korean BBQ sauce. Let rest for about 5 minutes.
- Spread chili garlic mayo on the toasted brioche buns. Place a glazed burger patty on each bun, topped with kimchi slaw, and assemble.
