Prepare the Brownie Base
- Preheat your oven to 350°F (175°C). In a medium saucepan, melt 4 ounces of chopped unsweetened chocolate with 1 cup of unsalted butter over low heat, stirring until smooth. Allow to cool, then whisk in 1 cup of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract. Fold in 1 cup of all-purpose flour, 1/2 cup of Dutch-process cocoa powder, and a pinch of salt. Spread the batter evenly into a greased pan and bake for 20-25 minutes.
Make the Mousse
- In a small bowl, sprinkle 1 tablespoon of gelatin powder over 3 tablespoons of water and set aside. Heat 1 cup of heavy cream with 1/4 cup of granulated sugar until boiling. Remove from heat, add gelatin mixture until dissolved. Pour over 8 ounces of semisweet chocolate, stirring until smooth. Gently fold in 1 cup of whipped cream, then spread over the cooled brownie base.
Prepare the Ganache
- Heat 1 cup of heavy cream and 2 tablespoons of unsalted butter until boiling. Pour over 8 ounces of semisweet chocolate and let sit for a minute. Stir gently until smooth, then spread over the mousse layer.
Chill the Cake
- Cover the cake with plastic wrap and refrigerate for at least 1 hour. Remove the sides of the springform pan once chilled.
Serve and Enjoy
- Slice the chilled cake into wedges and let sit at room temperature for 30 minutes before serving. Enjoy the rich layers!
