  1. In a mixing bowl, combine soy sauce, brown sugar, toasted sesame oil, fresh ginger, garlic, and black pepper. Whisk until sugar is dissolved.
  2. Place chicken thighs into the marinade, ensuring they are thoroughly coated. Cover and marinate in the refrigerator for at least 1 hour.
  3. Preheat the grill to medium heat (350°F to 400°F). Lightly oil the grill grates to prevent sticking.
  4. Thread the chicken and pineapple onto skewers, alternating between the two.
  5. Grill the kabobs for 10-15 minutes, turning every few minutes until chicken is golden-brown and reaches 165°F internal temperature.
  6. Let kabobs rest for a couple of minutes before serving. Garnish with sesame seeds if desired.
