Method
 

Preparation Steps
  1. Trim the skirt steak to remove excess fat and silverskin. Cut into uniform pieces.
  2. Combine all marinade ingredients in a bowl. Rub onto the steak pieces and marinate in the refrigerator for at least 2 hours.
  3. Bring the marinated steak to room temperature about 30 minutes before grilling. Preheat the grill to high heat.
  4. Grill each side of the skirt steak for about 3-4 minutes until a rich crust forms and the internal temperature reaches 125-130°F.
  5. Rest the grilled skirt steak for at least 10 minutes before slicing against the grain into half-inch pieces.
