  • 1 cup Corn

  • 6 pieces Flour Tortillas or corn tortillas for firmer texture
  • 2 cups Cheddar Cheese or Monterey Jack for variety
  • 1/4 cup Fresh Cilantro optional, for garnish

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or olive oil.
  2. In a large skillet, brown the ground beef over medium heat for about 7-10 minutes, draining excess fat.
  3. Stir in taco seasoning and a splash of water, simmer for 2-3 minutes until thickened.
  4. In a separate bowl, mix refried beans, black beans, and corn until well combined.
  5. Layer two tortillas in the baking dish, top with a third of the bean mixture, taco beef, salsa, and cheese.
  6. Repeat the layering process two more times, finishing with cheese on top.
  7. Cover with aluminum foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes.
  8. Let the casserole cool for 5-10 minutes before serving, garnished with fresh cilantro if desired.
