  • 8 oz Spaghetti or linguine Choose your preferred pasta type.
  • 1 tsp Salt For seasoning the pasta water.
For the Sardine Mixture
  • 1 can Sardines 4 oz, packed in olive oil.
  • 1 tbsp Olive oil Use extra virgin for better flavor.
  • 2 cloves Garlic Minced, use fresh for best results.
  • 1 one Lemon Use both zest and juice.
  • 1/4 tsp Red pepper flakes Optional, adjust to taste.
  • Black pepper Freshly ground, to taste.
For Garnishing
  • 1/4 cup Fresh parsley Chopped.
  • 2 tbsp Grated Parmesan Optional, can be omitted.

Method
 

Step-by-Step Instructions
  1. In a large pot, bring salted water to a vigorous boil. Add spaghetti or linguine and cook according to package instructions until al dente, about 8-10 minutes.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant and light golden.
  3. Gently introduce canned sardines to the skillet with their oil, breaking them up slightly and cooking for 2-3 minutes.
  4. Stir in fresh lemon zest and juice, along with red pepper flakes if desired. Mix well.
  5. Add drained pasta to the skillet, tossing gently to coat with the sardine mixture. Use reserved pasta water if sauce is too thick.
  6. Taste and season with salt and freshly ground black pepper to your liking.
  7. Serve immediately, garnishing with fresh parsley and grated Parmesan if desired.
