Preparation
- Preheat your oven to 350°F (175°C) and spray a 12-cup muffin tin with non-stick cooking spray.
- In a large mixing bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and brown sugar until no lumps remain.
- In a separate bowl, whisk the egg and then mix in the buttermilk and maple syrup until well combined.
- Pour the wet mixture into the dry ingredients and gently stir until just combined, being careful not to overmix.
- Fold in the crispy bacon until evenly distributed throughout the batter.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes until puffy and a toothpick inserted comes out clean.
- Cool in the muffin tin for 5 minutes before transferring to a wire rack.
