Preparation

  3. In a separate bowl, whisk the egg and then mix in the buttermilk and maple syrup until well combined.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined, being careful not to overmix.
  5. Fold in the crispy bacon until evenly distributed throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes until puffy and a toothpick inserted comes out clean.
  8. Cool in the muffin tin for 5 minutes before transferring to a wire rack.
